A vegetarian diet in Bolivia

Bolivia's high altiplano is not one of the world's more fertile regions, offering up only tasteless potatoes and, bizarrely, the world's most nutritious vegetable, quinoa . Also there are scrawny chickens, pigs, cows and llamas.

Thankfully the Amazon half of the country provides a wider diet to the odd vegetarian visitor like me. To the left is standard daily fare, cooked as appropriate on my Trangia stove: spinach, paw paw, beans, peas, chilies, carrots, nice bread, pumpkin. Yum!
